Thursday Thirteen - Top Thirteen Recipes on This Blog

It’s difficult sometimes for me to participate in Thursday Thirteen from this blog, mostly because of its topic - food and recipes. But every once in awhile I’m inspired to try a Thursday Thirteen (TT)  anyway. So, I decided to put up a link to the top 13 recipes on this blog for today’s TT.

Now, this isn’t the current top 13 - like as in this week only, it’s the 13 since this blog inception back at the end of the Spring. I’ve only done like 3 or 4 Thursday Thirteen’s since then, and none have ever been top recipes. Here ya have it! Also while you’re here, drop me a line and let me know of any recipes you’re looking for. I would love to find and try a few new ones in the coming week and report back. Also remember, all of these recipes have been tried by my family and if I ever post a recipe that hasn’t - I will definitely tell you!

Tempt My Tummy Tuesday

Tempt My Tummy TuesdayWelcome to my edition of Tempt My Tummy Tuesday (complete with a delicious and much anticipated recipe). Tempt My Tummy Tuesday is hosted by Lisa and  Lana. It is a meme where participants share recipes, kitchen and cooking tips, and anything food related.

This is the much anticipated recipe for Sausage and Egg Breakfast Casserole. It is SO delicious and easy to make. My kids ask for it all the time and its easy enough to prepare the night before and pop in the oven before school!

Sausage and Egg Breakfast Casserole

Sausage and Egg Casserole Recipe10 eggs
2 1/4 c. milk
1 1/2 tsp. ground mustard
1/2 tsp. salt
1/4 tsp. pepper
1 lb. pork sausage, cooked and drained
2 c. white bread, cubed
1 1/2 c. shredded cheddar cheese

In a large mixing bowl, beat the eggs, milk, ground mustard, salt and pepper for 1 minute or until completely combined. Stir in the cooked sausage, bread cubes (you can use croutons for a different flavor) and cheese. Pour everything into a 9 x 13 baking dish. Cover and refrigerate overnight or at least 12 hours.

Allow to sit at room temp for 30 minutes before baking. Bake, uncovered for 30-40 minutes at 400 degrees. Insert a knife in the center and if it comes out clean, it’s done. Let stand for about 10 minutes before serving. SOOOOO easygood!

Give Me 5 Monday Meme

Give Me Five of your favorite breakfast foods.

This week the topic is sure to get our taste buds working overtime! You may have more than 5 for this specific meal, just pick from your faves to share try not to drool onto your keyboards! Be sure and leave a comment on Becca’s page so she knows you participated.

Does Coffee count? It’s probably my favorite breakfast food. LOL Yeah, I know it’s a drink.

1. Pancakes. I am a pancake addict. I love them. I like them plain, I like them with loads of butter and syrup, I like them with fruit or chocolate chips in them. They are awesome. I eat them for more than just breakfast though. Sometimes I’ll heat one up just for a snack. Especially if it has fruit or choc. chips in it.

2. Cheesy Sausage and Egg Casserole. One of the easiest breakfast casseroles I’ve ever made. I will be sharing the recipe for it this week. So easy and sooooo awesome!

3. Bacon. I try so hard to be good because I know how bad it actually is, but I love it. Period. I limit myself, but ….. mouthwatering bacon. Oh my!

4. Oatmeal. My favorite is Apples and Cinnamon and when I am eating a piping hot bowl of it, it brings me back to my childhood so easily. I used to eat it all the time as a child and I still love it.

5. Waffles. I don’t like them nearly as much as I like pancakes, but I still love them. At our house we make waffle sandwiches. We heat the waffles like normal and then slather peanut butter and jelly on them. They are SO good!

Four Foods on Friday #46

Here’s this week’s Four Foods on Friday questions. You can play along too by answering these questions on your blog and then posting your link in a comment on the FFoF post on Fun, Crafts, and Recipes. Here are my answers to this weeks questions.

#1. Egg salad or deviled eggs. How do you prepare? I love egg salad, but typically I make deviled eggs with my eggs. I am an egg addict.
#2. French fries. Do you make homemade or frozen? Both. I have tried my hand at home-made a few times, but it is truly time consuming and with five kids I cannot usually find the time. I try really hard to leave french fries off the menu, but you know - for those quick dinner nights - and they just taste so good!
#3. Gravy. What do you use - homemade, jar, can or from a package? E. All of the above. No seriously I actually enjoy making it homemade, but sometimes its too much work and I need it for something now, so its usually a jar. Of course, truly it depends on what I’m making.
#4. Share a recipe for a hot (temperature, not spice) dish.

It’s what was for dinner a few nights ago.

Potato Chip Chicken Strips Recipe

1 1/4 c. sour cream
1/4 tsp. garlic salt
1/4 tsp. onion salt
1/8 tsp. paprika
12 oz. package of potato chips, smashed
2 1/2 lbs. boneless, skinless chicken breasts cut into 1 inch strips
1/4 c. butter, melted

In a medium to large size bowl, combine the sour cream, garlic salt, onion salt and paprika. In another bowl, dump the smashed potato chips. Take a 1 inch chicken strip and dip it into the sour cream mixture, coating evenly. Next dip into the potato chip mixture. Place the coated chicken strip into a greased baking dish. Once full, drizzle the chicken strips with melted butter. Bake at 400 degrees for 20 minutes or until chicken is no longer pink. Serve with different dips and sauces. So good!!

14. What do you think of this quiz? I think it’s interesting. Better questions than some other ones.

15. What is the last movie you saw? Hmm…Might have been the lifetime movie network movie titled “Little Girl Lost” it was awesome and it was a true story.

16. If you became a multi-millionaire overnight, what would you buy first? I would buy us a larger house, simply because this one is cramped with seven (or I would at least look at expanding this one). I would more than likely buy both of us a new vehicle, because ours are seriously on their last legs (err….wheels).

17. Tell me something about you that I don’t know: We just got a new puppy, which you would only know from reading earlier in the quiz. We now have two shih-tzu’s, a cat, an aquatic turtle and a bearded dragon. With five kids I just don’t see how we could fit another soul in here.

18. If you could change one thing about the world, regardless of guilt or politics, what would you do? Make sure that every family had a house to call home.

19. Do you like to dance? With my kids yes, at a dance club - not really.

20. Imagine your first child is a girl, what do you call her? a boy? Well, I already did that. My first child was named Ryan, my second Brielle. I wouldn’t change anything about their names.

21. Would you ever consider living abroad? Yes I would. I wouldn’t mind living in Ireland.

Four Foods on Friday #45

Here’s this week’s Four Foods on Friday questions. You can play along too by answering these questions on your blog and then posting your link in a comment on the FFoF post on Fun, Crafts, and Recipes. Here are my answers to this weeks questions.

#1. Artichokes. Love em or leave em? Love them in salads.
#2. What’s your favorite kind of bean? Hmm…probably green beans. LOL
#3. Share a recipe for any kind of cake.

Texas Sheet Cake
A few quick notes - it is best to use the ingredients as they are listed and not the low-fat or no-fat version of anything. Don’t substitute margarine for the butter. The cake will still turn out, but the rich flavor won’t be as good. Trust me on that, I’ve tried. It is seriously my one weakness where I know I’m putting on the calories. Tell ‘ya what - eat a piece and take a walk. That should cover it ;)

Cake:

1 cup butter
1 cup water
1/4 cup cocoa
2 cups sugar
2 cups flour
1/8 teaspoon salt
2 eggs
1 teaspoon baking soda
1/2 cup sour cream
1 teaspoon vanilla
Icing (recipe below)

Icing:

1/2 cup butter
1/4 cup cocoa
1/4 cup plus 2 tablespoons milk
1 box (1 pound) confectioners’ sugar (sift it first to remove lumps - otherwise icing remains lumpy)
1/2 teaspoon vanilla
Chopped Pecans (optional)

For the cake: In a saucepan, combine the butter, water and cocoa over med. heat until the butter melts. Don’t let it cook too long. In a separate bowl, combine the sugar, flour, salt, eggs, and baking soda. Add the butter mixture to the dry ingredients. Careful, it’s hot. Add the sour cream and vanilla and mix well. Pour into a sheet cake pan or jelly roll pan. Bake at 350 degrees for 20 minutes.

For the icing: In a saucepan, combine the butter, cocoa and milk over medium heat and bring to a boil. Immediately remove from heat and combine with confectioners sugar and vanilla. Mix well with a mixer to remove lumps. Spread over the sheet cake while it is STILL hot. You can either mix the chopped pecans into the icing before pouring it over the hot sheet cake, or sprinkle them over the top after you put the icing on (or omit all together).

#4. What’s your favorite dairy product? oooh, toss up between yogurt and cottage cheese. Yeah, I know.

On a different blog I managed, I used to participate in Friday Feast, however it has been on hiatus for awhile now and a new one has taken its place. Food For Thought Friday , and I plan to participate when I can.

Food, Food and More Food

Simply a quick meme I thought would be fun to do. Why do I insist on doing these? LOL

What cooking shows do you watch?
I really don’t, though sometimes I like to watch Top Chef for the simple entertainment value.

Your top three favorite cookbooks are:
Baking from my home to yours - Dorie Greenspan; Taste of Home Cookbooks; The Joy of Cooking

Your must-have kitchen accessory is:
Cast-Iron Skillet. Crock pot.

What is your go-to ingredient?
Olive Oil, Garlic and Herbs

How many courses should a meal have?
I don’t really do this. I think a main course is perfectly acceptable as the only part of a meal. Of course dessert is kinda nice too.

What’s your favorite course?
Appetizers. Desserts.

What nationality of food do you like the best?
Italian and French. I cannot pick one.

What’s your favorite meal of the day to prepare?
Probably breakfast, though I am much more apt to prepare breakfast for dinner ;)

Where do you find inspiration when creating a new dish?
Ingredients on hand. Taste of home.

What is your favorite comfort food?
Chocolate Cake.

Do you ever eat fast food? If so, what?
Yes. Wendy’s. Mr. Goodcents.

What restaurant do you want to eat at that you haven’t yet?
Probably anything in New York.

What’s your favorite dessert?
Texas Sheet Cake

Sometimes. Red wine. I’ve used white a few times.

How much time do you spend cooking a meal just for yourself?
I never prepare a meal just for myself. There are seven people in my family. LOL

What scent in the kitchen do you love?
Baked goods in the oven. Banana bread. Chocolate cake.

What ingredient(s) do you avoid/dislike?
Lima Beans, soy, tofu (sorry vegans - I keep trying to like it - its just not happening)

What’s your secret splurge at the grocery store?
Pringles specialty flavors and Chocolate. Sometimes Ben & Jerrys.

What’s your favorite midnight snack?
Leftovers reheated. A sandwich roll-up.

I Love Food

Another Friday meme - and this one I’ve seen before. I decided it was high time I did this one, and here it is for those that love to read all about food and read my answers.

Favorite food to crunch: Carrot Sticks.
Favorite comfort food: A hot cup of coffee with a sugar donut.
Food that makes the best noise:Fajitas. I love how they sizzle.
Favorite picnic lunch: Sub sandwiches, veggies, fresh watermelon, cold pasta or chicken salad, lemonade and iced tea.
Favorite food scene in movie: This is hard actually. I loved several scenes in the kids movie Ratatouille. But I loved the following food related movies: Simply Irresistible, Waitress (I cracked up at those pies she made and how she came up with them!), and No Reservations.
Favorite food lyrics: Jimmy Buffet “Cheeseburger in Paradise” (I love the whole damn song but here are my favorite lyrics) But at night I’d have these wonderful dreams, Some kind of sensuous treat. Not zucchini, fettuccini, or bulgur wheat, But a big warm bun and a huge hunk of meat.” LOL
Least favorite food lyrics: Eat It by Weird Al - “Have some more yogurt, have some more spam
It doesn’t matter if it’s fresh or canned.” (I’m okay with the yogurt part - but please don’t tell me to eat spam - EVER!)
Best food smell memory: The smell of vinegar on French Fries makes me remember buying fish and chips wrapped in newspaper in London.
Favorite summer snack: Fresh fruit. Period.
Food that reminds me of the ocean:Crab Legs, Shrimp and Lobster (Oh my!)
Favorite winter snack: Chili made by me
Most likely to eat for lunch: Pita Pocket or Sandwich roll
Least likely to eat for lunch: Energy bars. No thanks, I’ll stick to actual FOOD.
Makes me gag: Liver.
Food tradition I hate: Hm. Honestly when the bride and groom smash cake into their faces. I don’t get it - why exactly must that be a tradition?
Saturday night food: Pizza and popcorn.
Favorite wild foods: Hmm.. Does deer meat count as a wild food? Otherwise wild berries.
Favorite food for sex play: Chocolate syrup or whipped cream.
Favorite medicinal food: Anything with vitamin C - also yogurt and cranberry juice.
Food that reflects my heritage: French. I could name you a dozen but I love Croque-monsieur et croque-madame and Mousse au chocolat.
Food most like me: A Donut. Sweet and Soft.
Favorite raw food smell: Herbs. Period. Possibly Basil or Oregano

I Was Tagged…

Violette over at Big Shoes tagged me for this meme. Since I’ve just started doing a few on here, I thought I would join in the fun and go forward with it and have some “connection time” with other bloggers. I love it.

Here are the rules:

5. Leave a comment on each of the tagged blogger’s blogs letting them know they’ve been tagged.

Here are my six quirks.

1. I really am not OCD however, I must have all the exact same color hangers in my closet, the clothes facing the exact same way in colored order. Isn’t that pathetic? hehehe
2. I am constantly sorting and organizing things. I will get them all put away organized and a couple of weeks later, be re-organizing it. It could be because I have five kids - I’m not sure. LOL
3. I don’t use an alarm clock. Ever. My internal clock has worked with me for a very long time and I have never ever had a problem. It’s weird, actually.
4. This probably isn’t a quirk, but I cannot smell a skunk. I have never smelled a skunk, it is not that I have never been in the midst of the “supposed stench”, but I just apparently don’t have that smell aversion (1/1000 people are exactly like me). Yet, I have a GREAT sense of smell, and can usually sniff out where things are coming from.
5. I have to have my coffee in the morning before I sit down to do anything else. Either I cannot function without it, or I’m just a big coffee addict. Either way, it’s how it is.
6. I cannot sleep under a comforter. Period. I cannot be too hot when I sleep, so I usually sleep kinda balled up in the comforter with some parts of me out and some covered. It’s odd, I know.
