I thought it was funny this year, my daughter didn’t want a real cake. She has never done that before, and it just caught me by surprise. She said “I want something different.”, though when asked she didn’t know what that was. I decided to allow her to make her own cupcakes (we already had a horse cake on order). I really do think I might have a future baker on my hand. She had a blast and did almost everything except putting them in the oven, by herself.
Here are her finished Birthday Cupcakes. They look so good to me right now - I so think I need a cupcake.

I am in love with cake. I have no idea where that came from, and I cannot remember feeling like that when I was younger. But now as an adult, we run to the store every so often to grab a cake, just because. Well, because we are nuts and I know it.
Today is my youngest step daughters 9th birthday, but we celebrated over the weekend. None of the kids ever expect any particular type of cake, so I feel blessed because it gives me some creativeness in the kitchen. It is far cheaper to bake one at home (especially because I do it entirely from scratch) and decorating with the fun Wilton tools is just plain awesome.
So I decided that I would try my hand at making pig cupcakes for her. I had this design in my head and set off to Michaels to get some supplies to make it easier. Yes, well things changed quickly. I found this totally adorable bear head pan. I’m sure if you are into cake decorating at all you have seen it. It can be transformed into other animals and right there on the pan was a pig. I knew I had to do it. I spent a fortune getting the large kit of tips for the decorating part and then the pans and everything else, but in the end she was QUITE pleased with her cake. (Oh, and I don’t claim to be an expert - I had a few things working against me and one of them was that it was HOT HOT HOT and the icing kept melting on me)
So here is the finished product:

Happy 9th Birthday Sweetheart! We love you!
