Chocolate Crinkle Cookies RecipeWe made these today - well, we actually finished them today, which meant we got to eat them. Yum! I found them through the Joy of Baking, which is seriously one of my all-time favorite recipe sources and about all I can say is OMG! These cookies were absolutely heavenly! So chocolaty and ohhhhh! They definitely made it to our Christmas cookie list.

Chocolate Crinkle Cookie

4 Tbs. unsalted butter
8 oz. semisweet or bittersweet chocolate, coarsely chopped
1/2 c. sugar
2 large eggs
2 tsp. vanilla extract
1 1/2 c. all-purpose flour
1/4 tsp. salt
1/2 tsp. baking powder
1 c. confectioners sugar, sifted

In a saucepan, melt the chocolate and butter stirring nearly continuously. Remove from heat as soon as melted - don’t scorch. In a large bowl, beat the eggs and the sugar until it gets kinda fluffy. Then beat the vanilla extract in. Now stir the melted chocolate and butter in.

In another bowl, whisk together the flour, salt, and baking powder. Now add the dry ingredients to the wet ingredients (the chocolate mixture) and stir just until it is blended. Cover the bowl with plastic wrap and refrigerate at least 3-4 hours but overnight is best.

When ready to prepare, preheat your oven to 325 degrees. Put

Preheat oven to 325 degrees F (170 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper, and set aside.

Sift the confectioners sugar into a shallow dish. Grease your hands lightly and roll a small amount of the chilled dough in your hands to form a 1 inch ball. Roll the dough ball through the powdered sugar until it is well coated and no chocolate is seen. Remove the ball and place on a prepared baking pan. Keep forming balls and rolling through powdered sugar until all is complete. If the dough seems to get too sticky to roll, go ahead and place it back in the refrigerator for about 20 minutes or more and then retry.

Bake cookies for 8-10 minutes at 325 degrees. You want the outside a bit firm, but the center to be moist and chewy.

Sadly, we only have about 7 left and this was from about 4 dozen! LOL (careful they are highly addictive and oh so delicious!)

    Just found your blog today and I’ll be back. I love to cook and save money. These cookies are the bomb! Made them last year for Christmas and they’re on this year’s list as well. I have about 16 different cookies, bars, etc. aready on my list and have no idea how I’m ever going to make them all. I’m also brewing a batch of homemade vanilla that will be bottled up to go along with the cookie trays. I can’t wait!!!! :)
