Cheeseburger Soup Recipe
This soup is SO good and is more like a creamy potato soup with a twist of cheeseburger - but you just need to try it. It’s so good, even the kids will eat it!
Cheeseburger Soup Recipe
1/2 lb. ground beef
3/4 c. onion, chopped
1 tsp. dried basil
1 tsp. dried parsley flakes
4 Tbs. butter, divided
3 c. chicken broth
4 c. diced peeled potatoes (about 1 3/4 lbs or so)
1/4 c. flour
2 c. process cheese (like Velveeta)
1 1/2 c. milk
3/4 tsp. salt
1/4 - 1/2 tsp. pepper (to taste)
1/4 c. sour cream
In a large pot, brown beef until no longer pink, drain grease. Set the ground beef aside in another bowl. In that same pot, saute the onion, parsley, basil and 1 Tbs. of butter until they are soft and tender (about 10 minutes). Add broth, potatoes, and the beef, bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes are tender.
Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup, bring to a boil. Cook and stir for 2 minutes (keep stirring so it blends well and doesn’t get stuck). Reduce heat to low, add cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from the heat; blend in sour cream.
You should wind up with enough to feed a family of five or six with a little bit leftover.
