Super Easy Crockpot Rice and Beef Stew Recipe

I have to be honest, this isn’t exactly a beef stew recipe, in fact I’m not sure what it is. My ex husband concocted it way too long ago, and my kids have always eaten it all up. I have added a little here and there, but for the most part, it’s still his.

Super Easy Crockpot Rice and Beef Stew Recipe

1 1/2 - 2 lbs. stew meat (in your meat section)
Lawry’s seasoning salt, to taste
Tony Chachere seasoning (Louisiana spicey seasoning), to taste
garlic powder, to taste
1/4 c. green pepper, chopped
1/4 c. onion, sliced (this allows the kids to remove them later)
3 jars of beef gravy
4-6 c. cooked rice (depends on how much you want)

Grab your crock pot and plug it in. Now turn it on slow cook 6-8 hours (this is usually a much lower setting). Cut each piece of stew meat in half to make smaller pieces. First, it stretches the meat further and two, its just easier to eat that way. Drop each piece into the crock pot. When all meat is in the pot, season with garlic powder, Tony Chachere’s and Lawry’s to taste. Drop in green pepper and onion. Replace lid and forget about for about 4-6 hours. About an hour or so before you are ready to serve, (more if you are home and can do it earlier), pour the three jars of gravy into the crock pot. Fill one empty jar up halfway with water, replace lid - shake to get all gravy off the sides, open and pour into the next empty jar - do this again, with the last jar and then pour that last jar into the crock pot. (you just got about 1 more jar of gravy). Stir the meat and gravy and replace the lid. Now you can cook up your rice. You want about a cup per person eating. (and for the record, if you truly want this to be a stew, you can add one more jar of water after that one and it will work)

Now, when you are ready to serve, you can do it one of two ways (dinner plate, dinner bowl)- you can serve it in a dinner bowl by scooping 1/2 - 1 c. rice into the bowl and then spooning the gravy and meat over the top saturating it and turning it into a “stew”. OR you can do what I like to do, grab a dinner plate, scoop about a cup of rice on the plate, and spoon the meat and gravy mixture over the top. Allow the person who is eating it to mix it all up if they like. It’s really good and very hearty! (and tastes really good eaten as leftovers the next day!!)
