Peanut Butter Balls Recipe

Peanut Butter Balls RecipeWe all love these. I started out making them at Christmas, but now find myself making them throughout the year. I’ve been known to take them along to potlucks a time or two and everyone wants the recipe.  The recipe is simply a standard peanut butter ball recipe.

Peanut Butter Balls

1 c. light corn syrup
1 c. sugar
1 c. smooth, creamy peanut butter
6 c. corn flakes

In a small bowl, dump in the corn flakes, and set aside. Using the stove top, in a small pot, bring the corn syrup and sugar to a boil. Stir constantly. Allow to boil for 3 minutes then remove from heat immediately. Stir in the peanut butter. Pour the hot peanut butter over the corn flakes and mix together. Allow to sit for a few moments, and then roll into balls. Makes about a dozen. Double the recipe for more, or make smaller Peanut Butter Balls.

Frugal Fridays #6 - Chicken Oregano with Corn on the Cob

Dinner last night wound up being the perfect subject for today’s Frugal Friday.

On it’s 6th week of appearing in the blogosphere, I am once again participating in Frugal Fridays. This is the event where frugal foodies everywhere share recipes for delicious meals that cost $10.00 or less for a family of four. Since a large portion of my meals tend to be on the frugal side, I thought this fit with my blog concept and my own meal planning quite nicely. Hopefully in the next few weeks I will get a photo up with my Frugal Friday. Also, I have had to adapt a few recipes because I am always cooking for 7, but I figure if I can make a meal that costs about $15 for a family of 8, then halved would be even less. :)

Ingredients and Cost:
Frozen Chicken Breasts - $6.99 for a bag that had 9 breasts in it. (so for a family of four - this is two meals making it about $3.50 for one meal.
Corn on the Cob - I paid for two packages of 5. So for a family of four you would need one package and that cost is $2.99.
Oregano - I already had so didn’t have to spend any money on it. I think I got my HUGE container of it for about $2.99 and you could also use fresh if you wanted.
The only other optional item which I actually did not include in this dish was a cream of something can. Cream of Celery, Mushroom or even Chicken works well in this dish.

Thaw the chicken breasts overnight in the refrigerator. Season them to your own liking. In a skillet on the stove, add some olive oil (or whatever oil you like to cook with) and place the chicken breasts in a single layer. Cook on medium/high heat. Add oregano to the pan, sprinkling over the chicken too. Allow to cook for about 3-5 minutes per side. Next, lower heat and allow to simmer for about 10 minutes on low heat, checking and flipping once.

For the corn on the cob, remove the husk and silk. Coat butter all over each piece of corn. Sprinkle lightly with garlic powder if you desire. Place in oven at 350 degrees for 30 minutes. After 30 minutes, turn oven to broil and allow to broil for about 3-5 minutes. Turn at least once or twice and watch carefully. Remove once corn begins to look slightly golden. So good!

I would normally pair this with a salad, but instead we paired it with leftover pasta because it was what we had.

Cheap, Inexpensive and using stuff on hand.

Yet More Food Related Stuff

I don’t know why I feel the need to participate in every food meme I can find, but for whatever reason - I do. I enjoy it.

So here is another one, all set and ready to go for today!

What’s your #1 comfort food?

It really depends on the mood I am in. Usually chocolate cake or cookies. But sometimes an actual “meal” will comfort me - then its subs.

If you were on a deserted island, what one food would you want to have with you?

My wish would be that the island would have a ton of resources for fresh fruit. That would make me smile. If not, then I’m back to the sub sandwich thing.

What is/are your signature dishes? (What dishes are you ‘known’ for?)

Texas Sheet Cake and Hash Brown Casserole. Weird combination, but these are the two things that I am asked to bring often by name. Not just “that huge chocolate cake thing your make”.

It’s Friday night, you don’t know what to cook. You opt for…

I actually don’t have this happen too often because I meal plan, so dinner would already be thought out. But if not, we often grab a Papa Murphy’s pizza.

What’s your biggest weakness when it comes to food?

Baked goods. Donuts, Cupcakes, Cakes, Pies - anything sweet and baked.

What food can you absolutely not eat?

Well, I’m going to say Brussels Sprouts. I have tried and tried them in a variety of ways and I just cannot do it. Also nothing that stems from body parts of an animal that might not “normally” be consumed.

Depends on the time of day. If I need a drink in the A.M. it’s coffee no question. Usually the rest of the day is a mixture of iced tea and water bottles.

What’s the most decadent dish you’ve had?

I’m not actually sure. I can remember eating some totally “I want to die, I think I found heaven, what the hell IS this” chocolate cheesecake a long time ago. It had a cinnamon edge and while I have a recipe that is sinfully delicious and close, it just doesn’t measure up to that thing I ate years ago.

What’s your favorite type of food?

Seafood and Italian.

Favorite dish?

Honestly, I do not have a favorite meal. I like the ease of casseroles and one pot meals and those tend to taste the best to me.

If your partner could take you to any restaurant you wanted, which one would it be?

This is so silly, and I’ve been there before - but the Catfish Plantation. I so love that place. Mmm…. fried pickles.

Are you a soup or salad person?

Soup in the winter. Salad in the summer.

Buffet, take-out or sit-down restaurant?

This actually depends on my mood. I prefer a buffet style restaurant, because I love that everyone can get exactly what they want and also try new things. I also really like bringing food home and having a family night with games, a movie or something else while dining on take out.

What’s the most impressive dinner you’ve ever made?

This would be the first Thanksgiving I ever had everyone over. I went all out and catered to 13 people for the first time in my life. That WAS impressive and went over well. It wasn’t so much about the food as it was the fact that I was able to keep everything organized and everyone loved everything.

Do you consider yourself a good cook?

Yes.

Do you know what vichyssoise is?

Yes, and depending on how and WHO serves it, I actually can handle eating it. Oh, and its a cold soup with cream and potatoes and leeks.

Who’s your favorite TV cook?

Honestly, I enjoy Rachel Ray for her simple banter, but not necessarily all the foods she cooks (though we really do like a lot of them). I really don’t watch TV cooking shows very often.

Can you name at least three TV cooking personalities?

Martha Stewart, Rachel Ray and Paula Deen
