Quick Campfire Beef Stroganoff

1 lb. ground beef
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 8 oz. container of sour cream.

In a skillet, brown the ground beef. Drain. Add both of the soups to the skillet, stir until blended. Add sour cream and blend well. When everything is hot, its ready to serve. You can put it over noodles, mashed potatoes, rice or bread. (we’ve even served it on buns before and the kids loved this “new version” of sloppy joes.

Easy Lasagna Recipe

Easy Lasagna RecipeMy pickiest eater loves pasta, and we can get her to eat almost any kind. Often I hide veggies and other things inside because I know she will eat them. This is an easy lasagna recipe that is quick to make and you can usually hide a puree or even bits of spinach inside.

Easy Lasagna

1 1/2 lb. ground beef
1/2 c. oil/vinegar or Italian salad dressing
1/2 c. grated Parmesan cheese
10 - 12 lasagna noodles, cooked and drained
2 jars of spaghetti sauce
2 1/2 c. shredded mozzarella cheese

Brown the ground beef in a skillet and then drain. Stir in the salad dressing and parmesan cheese. Take your cooked lasagna noodles and layer half of the noodles on the bottom of a 13×9 inch pan. Add a layer of meat over the top, spaghetti sauce and mozarella cheese. Repeat until you have used up all the noodles or until the dish looks the way you want it to. You can add more cheese or use less cheese to taste. Cover the top with some spaghetti sauce and bake the dish at 350 degress for 30 minutes or until cheese is sufficiently hot and melted. You can sprinkle paremesan and mozzarella cheese over the top just before removing from oven.
