Rotel Spicy Cheese Dip Recipe
Everyone has eaten this at some point. Some people include meat (beef or sausage) in the recipe, and some people are inclined not to use it. The best part of this dip, is that it isn’t just for chips as everyone thinks. It makes a great dipping sauce or sauce on soft tacos, pieces of bread, steaks and chicken. It’s so good!
Rotel Spicy Cheese Dip
1 lb. ground beef
2 lb. box of Velveeta cheese
1 can Rotel tomatoes (you choose how spicy)
In a skillet, cook the ground beef. Drain off the grease. In a microwave safe bowl, slice the Velveeta cheese until it is in small cubes. Add the Rotel and then the cooked hamburger meat. Put the bowl in the microwave for 4 minutes. Remove and stir together. Put back in the microwave for 3-5 minutes until finished, checking and stirring again at the 3 minute mark. This can be made on the stovetop also. Drain the meat, add the rotel, add the cheese cubes and stir until melted. Then you can serve it with any kind of dipping chip, or one of the items I mentioned above.
