Colorful Holiday Jello Squares
These are a lot of work, but are a huge hit with kids for any occasion. The reason they are known as HOLIDAY jello squares is because depending on what colors or flavors of jello you use, you can coordinate them with holiday colors. For the sake of are upcoming Fourth of July, I will use red and blue jello for the layers. I also recommend preparing this a day or two ahead, because it takes awhile to get all the layers to set.
Colorful Holiday Jello Squares
4 pkgs. (3 oz. each) assorted flavored gelatin (we used two cherry (red) and two berry (blue) for the Fourth of July colors)
6 envelopes unflavored gelatin, divided (you can purchase a huge box of these so you can do this multiple times)
LOTS of boiling water, divided (see recipe for amount)
1 can (14 oz.) sweetened condensed milk
1/4 c. cold water
In a bowl, combine one package of blue jello gelatin and one envelope of unflavored gelatin. Stir in 1 cup of boiling water until dissolved. Pour into a 13″ x 9″ dish, coated with cooking spray. Refrigerate for about 20-25 minutes until set, but not firm. In a small bowl, combine the condensed milk and 1 cup of boiling water. In another bowl add the 1/4 cup of cold water. Sprinkle two envelopes of unflavored gelatin over the cold water. Don’t mix, just allow to stand for about 1 minute. Stir in 3/4 c. boiling water to gelatin mix. Add the milk mixture. Spoon 1 cup of creamy gelatin mixture over the first blue layer of jello. Refrigerate for another 25-30 minutes until set but not firm. Next, in a clean bowl, prepare the red jello adding 1 cup of boiling water. Mix until dissolved and pour over the creamy layer. Again, refrigerate about 25-30 minutes until set but not firm. POUR each layer slowly and carefully so as not to disturb the “not yet firm” layer below it. After that 25 period, add another cup of the creamy white gelatin mixture and set for 25-30 minutes. Continue to do this until you have completed the second blue, then creamy, then second red. Discard remaining creamy gelatin if there is any. Refrigerate for at least 1-2 hours after adding the last flavored gelatin to the pan. When you are ready to serve, cut them into 1 inch squares. These are a huge hit, and you can usually get loads out of one pan. You can double the recipe, and prepare two pans at once, but allow for a bit more refrigeration time for two in the fridge together.
