Delicious Parmesan Crusted Chicken Recipe
Chicken is almost like a staple at our house, because it is the one meat everyone loves. I am constantly trying new recipes to get different flavors. This one was a huge hit recently.
Parmesan Crusted Chicken
8 skinless, boneless chicken breasts
1 c. grated Parmesan cheese
1 c. bread crumbs
1 tsp. parsley
garlic salt
salt and pepper, to taste
3 Tbs. extra virgin olive oil (evoo)
Combine the cheese, bread crumbs and parsley in a medium size bowl. Add some garlic salt and pepper. In a large skillet, add evoo and heat over medium/high heat. Coat 1 piece of chicken at a time in the bowl of bread crumbs and seasonings. Coat thoroughly and set aside on a plate. When all chicken is completely coated, add 2 to 3 chicken pieces to the skillet at a time; careful to leave them some room. Cook for about 4 minutes per side. Remove and set aside on a plate until all chicken is cooked. Season with salt and pepper if you’d like. Tastes great and kids love it!






do you did the chicken or wet it before you bread it?
Hey Chato, I cannot believe I “forgot” that step, but I just assumed most people rinse off their chicken before using it.
What we do: Rinse off the chicken one at a time. Put on a paper towel while combining everything else. They should be damp and sticky when getting ready to coat them.
You can also use an egg if you are having trouble getting the crumbs to stick. Dip each breast in egg and then place in the bag.
