Easy Baja Fish Taco Recipe
We’ve been making loads of different types of salads lately. They are healthy meals, the kids love eating them and they don’t require heating the kitchen up. We typically eat the different 7 layer salads for lunch leaving dinner open to something a bit heartier. (oh and you can switch out the layers or add some - we use green pepper slices and tomatoes for more flavor).
Easy Baja Fish Tacos
1/2 c. sour cream
1/2 c. mayonnaise
1/4 c. chopped fresh cilantro
1 pkg. Taco Seasoning Mix, divided
1lb. white fish fillets, cut into 1-inch pieces (you can substitute chicken or beef also!)
2 Tbs. vegetable oil
2 Tbs. lemon juice
1 pkg. taco shells
In a small bowl, combine the sour cream, mayo, cilantro and 2 Tbs. of the seasoning mix. In another bowl, combine the chopped fish (chicken or beef), vegetable oil, lemon juice and the rest of the seasoning mix. Pour this into a warm skillet, and cook, stirring constantly, over medium/high heat for 4 to 5 minutes or until the fish flakes easily when tested with a fork. If you are cooking chicken or beef, allow to cook a few minutes longer until you are sure the chicken is cooked.
Once cooked, it’s ready to be added to taco shells. Fill and then add whatever else you would like - lettuce, tomatoes, salsa, etc.
