Another Moist Banana Bread Recipe

Moist Banana Bread RecipeI have been addicted to bananas lately. Actually summertime makes me crave fruit like crazy, so I tend to look for fruity things. There is nothing better than moist banana bread and it makes the perfect after-dinner snack. Plus, it’s pretty easy to make and my kids love it.

Another Moist Banana Bread Recipe

1/2 c. vegetable oil
1 1/2 c. sugar
2 eggs, well beaten
1 tsp. vanilla
1/4 tsp. salt
1 1/2 c. sifted flour
1 tsp. baking soda
1/3 c. buttermilk
3 ripe bananas, mashed
1 c. walnuts, chopped (optional)

Cream the oil and sugar together in a bowl; then add the eggs, vanilla and salt. Mix well. In another bowl, combine the baking soda and buttermilk. Add flour and the baking soda/buttermilk combo alternately. Add the mashed bananas. Gently fold in the optional walnuts. Grease two regular size loaf pans. Pour half the batter into each pan and bake for 45 minutes at 350 degrees. When the bread separates from the side of the pan and a toothpick inserted comes out clean, it is done. Enjoy! Moist and Delicious!
