Quick Potato Kugel Recipe

Potato Kugel RecipeYou don’t have to be Kosher to eat this delicious potato kugel. I received this recipe from a friend several years ago after she brought it to a potluck. It was delicious and we have made it instead of mashed potatoes many times!

Potato Kugel Recipe

6 Tbs. vegetable oil
6 large russet potatoes, peeled and grated
1 lg. onion, finely grated
4 eggs
1 tsp. salt
1/4 tsp. pepper
1/4 c. chopped fresh parsley
6 Tbs. matzoh meal

Preheat oven to 375 degrees. Put the vegetable oil into a 9×13-inch baking dish. Place the grated potatoes into a strainer and rinse with cold water. Mix them up with your hands to get them really rinsed off. It rinses off the extra starch. Drain them thoroughly and then squeeze like a sponge as you remove them to remove as much water as possible. Put them in a mixing bowl. Add the onion and mix with potatoes. In a separate bowl, beat the eggs with the salt and pepper. Pour into the potato mixture and mix well. Add the parsley and matzoh meal. Mix well.

Put the baking dish with the vegetable oil into the oven for 5 minutes. Remove to stovetop. Pour about half of the hot oil into the potato mixture, stir well. Now add the potato mixture to the remaining oil in the baking dish. Bake at 375 for 50 to 60 minutes or until the top of the potatoes are golden crisp brown. So delicious. I promise these may seem like they have a lot of steps but they are seriously easy and very delicious.
